“Let The Sunshine In” Solstice Breakfast


The “Let The Sunshine In” Solstice Breakfast 




Yes, we know a light breakfast with veggies, little to no fat and egg whites would be wonderful healthy way to start any morning, we totally get that.



But if you would like to celebrate the solstice with a big, decadent breakfast, here’s a great casserole dish; full of eggs, savory sausage, ham, cheese and all kinds of other deliciousness, and if you want to go even bigger, enjoy it with biscuits and gravy.


Ingredients

2 tbsp. butter, real butter

1/2 cup mushrooms, chopped

1 small onion, diced

2 cups southern-style or cubed, hash browns potatoes (thawed if using frozen)

6 eggs, beaten

2 cups sausage, browned

1 cup diced ham

2 cups cheddar cheese, grated

Fresh rosemary and sage

Salt and pepper to taste

1/2 cup Asiago cheese, grated


  1. Preheat your oven to 350 F. 
  2. Heat the butter in a large nonstick skillet on medium heat.
  3. Add the mushrooms and onion, sauteeing until they are almost caramelized.
  4. Add potatoes and cook until browned, stirring occasionally.
  5. In a buttered or greased casserole dish, spread the potato mixture around to evenly cover the bottom.
  6. Mix the eggs, sausage, ham, cheese, herbs, salt, and pepper together in a small bowl, and then pour over potatoes.
  7. Bake in the oven at 350 F for about 30 minutes. About ten minutes into the bake time, sprinkle the Asiago cheese on top.
  8. Remove from oven and allow to cool for ten minutes before serving.
